1280 x 720 pixels, 16:9, which is the size YouTube expects for a video thumbnail.

The thing worth remembering is how small a thumbnail actually appears. On a phone it may be only a couple of centimetres wide. Any text on it needs to be very large and high in contrast to survive that, and fine detail will simply disappear.

YouTube also caps thumbnail files at 2 MB, so if yours is bigger, run it through the JPG Compressor afterwards.

What size should a YouTube thumbnail be?

1280 x 720 pixels, under 2 MB. Smaller images are accepted but look soft on large screens.

My text is unreadable in the thumbnail.

It is being shown far smaller than you are designing it. Use very few words, very large, in a colour that contrasts strongly with what is behind it.
